The 24-year-old left-hander from Victoria led 5-2 at the interval and then reeled off the first three frames of the evening session.
The 21-year-old from Stoke, who had never previously been past the last 16 of a ranking tournament, then began a mini fightback but the world number 13 sealed the victory with a 64 break in the 14th frame.
Robertson, who has broken into the world's top 16 this year but was in his first major final, produced runs of 100, 78 and 59 to go 3-1 up after world number 48 Cope had taken a scrappy opener.
A 55 run from Cope sandwiched two more frame successes for Robertson as his superb long potting restricted his opponent to just five points in frames five and seven.
A 68 break gave the "Melbourne Machine" a commanding 8-2 advantage but Cope responded with a century clearance.
However after losing frames 12 and 13 in tense fashion, Robertson settled matters to land the £60,000 first prize.
